Ingredients

  • 2 cups of water
  • 1 cup of sugar
  • 4 vanilla beans, split
  • 4 cups champagne, chilled

Method

  • Boil water and sugar in a small saucepan and add vanilla beans. Reduce the heat and let it simmer uncovered for ten minutes. After turning off the heat, remove the beans.
  • In a champagne flute, pour a quarter cup of vanilla syrup and half a cup of champagne. Adjust accordingly for every serving.

2. Chilean monkey tail punch

Servings – 16

Time – 25 minutes plus chilling

Ingredients

  • 4 cups 2% milk
  • 1 cup of sugar
  • 3 cinnamon sticks (3 inches)
  • 3 whole cloves
  • 2 cups strong brewed coffee
  • 1-1/2 cups pisco, aguardiente, grappa or brandy
  • 2 tablespoons vanilla extract

Method

  • Boil milk, sugar, cloves and cinnamon in a large saucepan. Reduce the heat and simmer uncovered for five minutes. Later, turn off the heat and let the mixture come to a room temperature.
  • Strain it into a large pitcher and stir in vanilla, pisco, and coffee. Refrigerate until chilled.

3. Vanilla and cinnamon-kissed apple latkes

Servings – 3 dozen

Time – 25 minutes

Ingredients

  • 2 tablespoons confectioners' sugar
  • 2 tablespoons ground cinnamon
  • 4 cups all-purpose flour
  • 2/3 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups orange juice
  • 1 cup 2% milk
  • 4 large eggs, lightly beaten
  • 4 tablespoonsvanilla extract
  • 2-3/4 pounds apples (about 6 large apples), peeled and shredded
  • 3/4 cup canola oil

Method

  • Combine confectioners' sugar and cinnamon in a small bowl.
  • Blend flour, sugar, baking powder, salt, orange juice, vanilla, milk and eggs in a large bowl. Finally, add the apples.
  • In a large cast iron, heat two tablespoons of oil over medium heat. Drop a quarter cup of batter in the oil and press lightly to flatten. Fry the latkes till they turn golden brown. Remember to drain on paper towels and sprinkle with cinnamon-sugar before serving.

4. Berries with vanilla custard

Servings – 4

Time – 20 minutes plus chilling

Ingredients

  • 1 cup half-and-half cream
  • 2 large egg yolks
  • 2 tablespoons sugar
  • 4 teaspoonsvanilla extract
  • 2 cups fresh berries

Method

  • Cook and stir mix cream, egg yolks and sugar over low heat in a small heavy saucepan. The mixture should be cooked enough to coat a metal spoon but should not be boiled. 
  • Transfer this mixture to a bowl and stir in vanilla. Refrigerate and serve chilled over fresh berries.

5. Vanilla frosting

Servings – 6 cups

Time – 5 minutes

Ingredients

  • 12 cups confectioners' sugar
  • 3/4 cup butter, softened
  • 3/4 cup whole milk
  • 1 tablespoon vanilla extract

Beat sugar, butter, milk and vanilla at a medium speed till the mixture turns smooth and fluffy.

Method

  • Combine all the ingredients and stir well till the sugar is completely dissolved.

Ingredients

  • 1/4 cup packed brown sugar

  • Dash salt

  • 1 large egg yolk, lightly beaten
  • 1-1/2 teaspoons butter
  • 1 tablespoonvanilla extract

Method

  • Combine brown sugar, corn-starch, salt, milk and egg yolk in a small saucepan and stir until smooth. Cook and stir till the mixture is thickened.
  • Stir in butter and vanilla after removing the mixture from the heat. Stir the mixture several times till it cools to a room temperature. Pour into two separate dessert dishes and refrigerate for an hour.
